A honey roast ham was one of my favourite things when I ate meat.. especially the one my mum makes at Christmas!
She glazes it with honey and chilli before baking it for a beautiful caramelised crust.. and y'know what.. why should I have to miss out on that experience now? I shouldn't! so.. I made it vegan.. Ta-Dah!
This is great with a roast dinner or on sandwiches/salads and to just snack on! Super simple (as always) and super tasty, PLUS no piggies are harmed.. MAGIC!
It's best to make this the day before you wanna roast it
You will need:
for the ham: 300g Vital Wheat Gluten, 2 tbsp nutritional yeast, 2 tbsp soy sauce (plus extra to coat), 3 tbsp tomato puree, 3 tbsp paprika, 1 veggie stock cube (dissolved in 200ml hot water), 300g silken tofu, 1 tbsp onion powder, 1 tbsp liquid smoke
for the glaze: Maple syrup and chilli flakes
1. Let's make ham! This could not be easier.. grab a blender and put everything apart from the wheat gluten in it. Blend it all up until super smooth. Pour into a large bowl with the gluten and mix/knead for a couple of minutes until a firm, bouncy dough forms.
2. Make your dough look like.. well.. a ham. Then, lightly brush with a little more soy sauce. Wrap tightly in cling film and tin foil. Add to a pan of boiling water and let it simmer for an hour. Have a cuppa tea and watch telly for a bit!
3. Remove from the water and allow to cool completely. Gently score the ham with a knife (however you want.. I went for a diagonal look, but any scoring is fine) then brush with a generous layer of maple syrup and sprinkle with chilli flakes.
4. Bake uncovered in the oven at 180 degrees for 30-40 minutes until the top is sticky and caramelised and delicious! THAT'S IT!!
Slice it, chuck it on a sarnie and you're sorted! or, like below, have it with your roast dinner.. whatever you choose to do with it.. ENJOY!
