My favourite sandwich EVER is a New York Deli.
Pastrami, swiss cheese, gherkins, mayo, mustard... GET INSIDE ME. YES.
Long story short, I wanted to make my own vegan pastrami so I can eat New York Deli sandwiches all the time.. so I did!
This is tender, peppery, meaty heaven and I so easy to make.. wanna know how to do it? well....
You will need:
150g Vital Wheat Gluten, 50g bread flour, 300ml strong vegan beef stock, 1 tbsp tomato puree, 2 tbsp smoked paprika, 1 tbsp ground cumin, 1 tbsp ground coriander, 1 tbsp onion powder, 1 tbsp garlic powder, 1 tbsp beetroot powder (optional) 1 tbsp soy sauce, 1 tsp miso paste, 1/2 tsp mustard, 1 tbsp yeast extract, 1.5 tbsp Saltment Pepper-Mint spice blend (or finely ground black pepper)
For the marinade: 2 tbsp each of soy sauce, onion powder, garlic powder, splash of water
1. In a large bowl, measure out the gluten and bread flour. In a small bowl, mix together the paprika, cumin, coriander, onion powder and garlic powder. Add 2/3 of the spice blend to the bowl with the flours. Add beetroot powder (if using) and whisk together. We will save the rest of the spice mix for later!
2. In a a jug, add the tomato puree, miso paste, yeast extract, mustard and soy sauce to 300ml vegan beef stock. Pour the stock into the flour blend and mix until a soft ball forms. knead the seitan dough for 1-2 minutes.
3. Form your seitan into a rectangle. To the remaining spice mix, add in the Saltment Pepper-Mint blend (or black pepper). Cover the seitan with the spice mixture and coat evenly. Sprinkle with a small amount of sea salt, then tightly wrap the seitan in cling film, then tin foil. Add the seitan to a pan of boiling water and simmer with the lid on for 1 hour.
4. When slightly cool, carefully remove the seitan from the foil and cling film. Into a large dish or container, add all the ingredients of the marinade place and stir. Thoroughly coat the seitan in the marinade and allow to cool completely.
THAT'S IT!
Slice it thinly for a delicious sandwich, or just eat it as it is.. whatever you do with it... ENJOY!
