Vegan Minced Pork!

Better than a beefy mince, this has sausage-y vibes and is PERFECT for a Ragu, Lasagne, breakfast hash, Bolognese.. anything you need a meaty mince for!

Flavoured with fennel and mustard seed for the perfect pork sausage feel... fancy a go? then do this...


Go and get these things:

200g Vital Wheat Gluten, 1/2 tsp black pepper, 2 tsp fennel seeds, 1 tsp mustard seeds, 3 tsp mixed dried herbs, 2 tsp garlic powder, 2 tsp garlic powder, 250ml strong vegetable or vegan chicken stock (plus more for the cooking broth) , 2 tsp soy sauce.


1. Into a spice/coffee grinder, add the fennel and mustard seeds. Blitz into a fine powder. In a large bowl, measure out the gluten and stir through the dried herbs, spices and seasonings. In a jug, mix the stock and soy sauce, then gradually add the liquid into the gluten to form a soft dough. Knead this for around 2 minutes.




2. Divide the dough into 4 chunks, then add to a large pan with enough stock to just cover the pieces. Place the lid on the pan and allow to simmer for 35-40 minutes.




3. Remove the seitan from the stock and allow to cool fully. Roughly chop the seitan and add to a food processor. Blitz the seitan until you get your perfect mince texture
