Vegan Pepperoni!

Pepperoni pizza.

Need I say anything else?


This is simple, easy, spicy and delicious. Chuck it on a pizza, slice it into pasta, enjoy chilled with a cheese platter, throw it on a sandwich.. bloody beautiful! Now, let's begin..


You will need to buy this stuff:

3-4 heaped tsp paprika, 2 tsp garlic powder, 2 tsp onion powder, 1 tsp group black pepper, 1tsp ground fennel seed, 1 tsp ground mustard seed, 1 tsp ground chilli flakes, 1 tbsp tomato puree, 1 tsp brown sugar, 1 tbsp soy sauce, 1 tsp liquid smoke (optional), 225g block extra firm tofu (I'm using Tofoo), 150g vital wheat gluten, 150ml strong vegetable stock.



1. Once your fennel seed, mustard seed and chilli flakes have been ground, mix these in with the rest of the dried spices. Add 1/3 of the spice mix into a blender along with the tofu (diced), vegetable stock, tomato puree, soy sauce, brown sugar and liquid smoke (if using) The mixture will be very thick, you might need to give it a stir to get all the ingredients incorporated.





2. Tip the tofu mixture into a large bowl with 150g gluten and another 1/3 of the spice blend. Mix together to form a stiff ball of dough. Divide the dough into 3 equal pieces and form each piece into a sausage.





3. Sprinkle over the remaining 1/3 of the spice blend and roll each sausage in it until evenly coated. Then, wrap each sausage tightly in cling film, and then again in tin foil.





4. Place the pepperoni into a pan on boiling water and simmer them with the lid on for 50 minutes. Remove from the water and tin foil, and allow to cool in the cling film until needed.




THAT'S LITERALLY IT. BOOM! Slice it, dice it, eat it, love it. YA WELCOME.
