Fill these with anything and everything you want, simple!! Super easy, cheap and quick to make, once you make these you won't want to go back to shop bought! You can make 8 medium flatbreads out of this mix! Anyway, here we go...
You'll need these things:
500g plain flour, 2 tbsp vegetable oil, 3 tbsp soya yoghurt, 2tsp salt, some cold water
1. Chuck the flour, oil, yoghurt and salt into a large bowl. Slowly add cold water whilst mixing to form a soft dough (not sticky)
2. Flatten and wrap the dough in cling film and chill in the fridge for as long as possible.
3. When you're bread-y to cook (hehe) take the dough out of the fridge and cut into 8 equal pieces. Heat a large frying pan (medium/high heat) and very VERY lightly coat with oil (use some kitchen paper to rub a bit round the pan)
4. Roll out each ball on a floured surface until about 2-3mm thin, and add to the hot pan (careful not to let it fold over) you will notice little air pockets forming, that's good! Gently and quickly press the bread into the pan to make MORE air bubbles. Then flip over and do the same on the other side... like this...
DONE! PERFECT! ENJOY!
