Potato Boulangere is just a fancy potato bake. Usually layered with white potatoes, onions and cooked in stock. Now don't get me wrong, it's delicious! but... couldn't we make it just a little bit better? YES. BECAUSE I DID. LOOK..
You'll need these things: 2-3 medium sweet potatoes, 1 onion, oil or oil spray, 1tsp garlic powder, 1 tsp paprika, salt and pepper, mixed herbs, 300ml vegetable stock, a handful of spinach, vegan cheese of choice
Also, preheat your oven to 180 degrees, and get a baking dish and tin foil out.
What to do...
1.Peel and slice your sweet potatoes into slices of equal thickness, about 1/2 cm thick or less.
In a bowl, mix your potatoes with garlic powder, paprika, herbs, salt and pepper, and oil of choice. Put to one side.
Slice your onion and chuck it in a frying pan. Let it soften and get some colour, but nothing too serious. Add the spinach and let it wilt down before removing from the heat and popping to one side. Take a moment to get really annoyed at how little spinach you actually have left.. now breathe.
In the baking dish, add a layer of potatoes, followed by a layer of onions, and a handful of your favourite vegan cheese.. REPEAT.. Like this, look...
Pour on the veggie stock until the dish is about half filled. Cover with tin foil
Bake at 180 degrees for about 30 minutes. Then remove the foil and whack the oven up to 200 degrees. Leave to bake for another 20ish minutes until most of the liquid has been absorbed and the top looks proper reyt nice, you'll just know.
DONE! EAT! ENJOY! YOU'RE WELCOME!
Side note - you can make a really nice sauce if you use any tasty stock left in the dish, pour that into a pan and add some tomato puree and cornflour mixed with a little bit of water 😊
