I gave a big jar of this to my sister and it lasted her about a day. Chuck it on a salad, in a wrap, on a kebab, just spoon it into your mouth, and be happy! Right then...
Go and get this stuff:
1 red onion, 1 tbsp mustard seeds, 1 1/2 tsp salt, 1 tbsp caster sugar, a splash of boiling water, malt vinegar, 1 tsp garlic powder, beetroot powder (optional)
1. In a bowl or Tupperware, add finely sliced red onion, mustard seeds, salt, sugar and garlic powder. Get your hands involved to mix and squeeze all the loveliness into the onion.
2. Add a splash of freshly boiled water (up to the halfway point on the onion) and give it a mix. Then add enough malt vinegar to just cover the onions. Give it a little taste, and adjust to your taste (more sugar or vinegar, if you like it sweeter or more pickle-y) Add beetroot powder (if using.. this is just for colour), cover, and leave to chill until needed.
