Vegan Doughnuts!

Who doesn't love a doughnut?! Sweet, fried, filled, fluffy round dough.. in ANY FLAVOUR you want! I went for jam filled, classic glazed, chocolate glazed and a filled chocolate orange ganache. WOW. This version, of course, is vegan.. meaning EVERYONE can enjoy them, and that's what food is all about in my opinion. Sharing homemade delicious moments with friends and family. Anyway... ahem.. shall we get on with it?



You'll need all this stuff: For the dough; 380g plain flour, 50g caster sugar, 1/2 tsp salt, 2 tsp dried yeast,1/4 tsp nutmeg, 1tbsp egg replacement powder (I used Bob's Red Mill) 225ml warmed plant milk, 30g melted vegan butter, 1tsp vanilla extract, vegetable oil for frying For the glazes/fillings: 500g icing sugar, 50g butter, 100ml plant milk, 2 tbsp cocoa powder, a handful of dark chocolate buttons or chunks, vanilla extract, orange flavouring, red or pink food colouring, piping bag and nozzle, jam of choice.



1. The dough. In a large bowl, mix together the flour, salt, sugar, yeast, nutmeg and egg replacement powder. In a jug, mix the melted butter, warm milk and vanilla. Slowly add the went ingredients to the dry whilst mixing. The dough will be soft and kinda sticky, but this is okay! As it proves, it will become less sticky as the flour absorbs the water. Very lightly knead for a couple of minutes to form a soft ball (cheeky). Place in the bowl and cover with cling film. Leave to rise in a warm place for 1.5 hours until doubled in size... like this, look...






2. Carefully tip the dough onto a lightly floured surface and stretch out to a thickness of about 3cm, being careful not to knock all of that precious air out of it. Using a lightly floured cutter or the rim of a glass, cut out circles of dough. Then, using a smaller... thing... cut out a small circle in the middle (save the middles, you can fry them to make little doughnut balls! cute!) I tried to make mine look like flowers but it went a bit tits up. You live and you learn, I guess.

Once you've cut out all your doughnuts, cover and leave to rise for a further 15-20 minutes.






3. In a deep pan, add about 2-3 inches of vegetable oil. DON'T use anything like olive oil, it just won't work. The smoking temperature is too low and the taste is too strong. Go for a very plain type of oil. Once the oil reaches about 160 degrees (chuck a blob dough in, once it floats and browns and looks like doughnut) you're ready to roll. VERY CAREFULLY add a doughnut to the hot oil one at a time. Flip to make sure both sides are evenly brown. They will only need about a minute or so each side, they brown very quickly. Make sure your oil doesn't get too hot, take it off the hob to cool slightly if you need to before carrying on. You're looking for something like this....






4. Once all your doughnuts are fried, place them on kitchen towel to absorb excess oil. Leave them to cool fully before filling and glazing.



5. Whilst your doughnuts are cooling, we can sort the glazes! The classic pink glaze is super easy... mix icing sugar in a bowl and slowly add a splash of plant milk, whisking all the time. you want it thick enough to stay on the doughnut and not run off the side. Then, add a drop of vanilla and a drop of red/pink food colouring. That's it!





6. For the chocolate glaze, melt 50g butter in a pan and whisk in the cocoa powder and 100ml plant milk. Gradually add icing sugar until you've got a lovely, shiny glaze. Add a handful of your favourite dark chocolate and whisk through until melted. Set half of this aside for a glaze, and keep the other half in the pan. To make the filling, we are simply going to add orange flavour, extra icing sugar and dark chocolate until it's at your desired, pipeable consistency. Cover with cling film to prevent a skin forming and set both of these aside for now.






7.To fill the doughnuts once cooled, fill a piping bag with the slightly cooled chocolate orange filling and poke a small hole in the side (I used the end of a metal straw) Stick your nozzle in and gently fill with the tasty stuff. DON'T let the doughnut overfill and burst, you'll be so upset. For the jam ones, do the same as above.. but with jam.





8. Once filled, dip each doughnut in your glaze and leave on a wire rack to drip. Decorate however you want.. and THAT'S IT. So fun and simple to make... go forth and FRY.
