Vegan Fried Chick'n

Crispy, tender, spicy, dirty fried chicken.. what's not to love?!

This is a SUPER simple soft seitan recipe, and the results are DELICIOUS!


We had ours with chips, salad and southern style gravy, to make it proper KFC style! But these would be amazing in a wrap with sweet chilli sauce! However you decide to eat them, you won't regret it.. so.. here we go!


Go and get these things first:

for the chicken: 200g Vital Wheat Gluten, 1/2 block firm tofu, 2tsp garlic powder, 2 tsp onion powder, 200ml strong vegetable or vegan chicken stock, 1 tsp miso paste, 2 tsp soy sauce, 1/2 tin of chickpeas (around 200g),

for the coating: plain flour, salt, pepper, paprika, turmeric, mixed herbs, ground cumin, garlic and onion powder, soda water, chilli powder (optional), vegetable oil

(the coatings quantities depend on how much chick'n you are frying and how you like your chick'n spices)



1. Let's make some chick'n! Add everything apart from the vital wheat gluten into a blender and blitz until smooth. Pour the mixture into a large bowl with the gluten and gently knead for for a minute until combined into a soft dough.




2. Divide the dough into 4 pieces. Roll out each piece flat. Brush each piece with vegetable oil and layer up until you have a stack of seitan! This will provide a beautiful texture once it cooks.




3. Wrap the seitan tightly in cling film and then tin foil. Boil in a large pan of water, with the lid on, for 1 hour. Then, remove from the water and allow to cool. You can then pull your seitan apart into chicken sized lumps! Whatever size you fancy, it's your dinner!




4. For the coating we need a batter mixture and a four mixture. Both mixes are the same, except you add soda water to one of the flour mixtures to make the batter. In a large bowl, add the flour and all the spices. You can add as much or as little as you like depending on your taste. Split the flour mixture into 2 bowls. Add soda water into one bowl to make a batter, similar to a thick pancake batter.




5. Dip each seitan piece into the batter, and then coat in the flour (If you do it the other way round, the end result is very un-KFC-like.. more dirty battered chicken)

Once coated in flour, add into a hot pan of vegetable oil around 2cm deep. Fry each side until golden.. Then, season with salt and black pepper and bake the chick'n pieces in the oven for around 20 minutes at 200 degrees until super crispy and delicious.




6. THAT'S IT. serve however you like and just enjoy it, man. YA WELCOME!!
